Bircher Muesli

I remember the first time I tasted bircher muesli. It was while staying at the Sofitel Hotel.   

You can judge the quality of a schmick hotel by their bircher muesli.  Fresh, plump, creamy, smooth; like that feeling when you melt into the bed at that schmick hotel.  You know that feeling right?!  

Mmmm dreamy, creamy memories of the Sofitels' bircher muesli.  My version isn't even close.  Tasty it is, healthy yes that too, approved by the kiddies - tick.    

Ingredients

Serves approximately 4

1 1/2 cups of rolled oats, (choose gluten-free if need be)

1 1/2 100% coconut water (no added sugar or additives)

1 vanilla bean 

1 tsp ground cinnamon

1/4 cup pepitas

1/4 cup almonds, put into slithers

1/4 cup desiccated coconut (no added sugar)

1 small Granny Smith apple - shredded into very thin strips or grated

20ish Blueberries

Method

Mix oats, cinnamon, apple and coconut water into a glass/ceramic bowl.  Split the vanilla bean and scrape into the bowl the seeds, drop in the bean pod in too give it another stir, cover and then pop into the fridge to soak overnight.  

Remove from fridge, pick out the vanilla pods, give the wet mix another good stir as the cinnamon may have dropped to the bottom of the bowl.  Choose the cups/bowls that you'll be serving your bircher muesli and start layering.  

Oats first, then coconut, pepitats, almonds, and 5 blueberries on each, add more shredded granny smiths and bam!  Enjoy.  

Don't expect this to be a sweet bircher muesli, but do expect it to be delicious.    If you like your bircher muesli to be a little sweeter, try them with my favourite PEARS
