Sheenagh McGeehan's Recipe Competition Entry

Zucchini, Corn, Carrot and Bacon Brekkie Muffins

1 medium zucchini

Small tin sweet corn

6 slices of bacon, fat trimmed off, grilled and sliced

1 carrot grated

1 1/2 cup almond flour

2 eggs whisked

2 garlic cloves chopped

1/2 chilli chopped

Salt and pepper

Heat oven to 200 degrees Celsius 

Grate zucchini and carrot together, squeeze out excess water after with paper towel.

Place zucchini, carrot, corn in a bowl and mix with bacon, almond flour, eggs, garlic and chilli, with salt and pepper.

Scoop into a 6 muffin tray, use baking paper as a muffin mould and place the mixture inside. 

Bake for 25-30 minutes.
