Cajun Oven Baked Salmon with Mushroom and Capsicum Quinoa Salad

suitable for lifestyle level of WLC


1 Salmon fillet
1/2 cup of quinoa
3 mushrooms (chopped chunky)
1/2 red capsicum (diced)
1/4 red onion (diced)
handful of spinach
1 lemon (cut into wedges)
1 cup boiled water for cookin quinoa
sea salt and Cajun pepper

season salmon and place in oven that has been preheated to 180 (1/2 fillet to speed up cooking time)
saute onions, mushrooms and capsicum in pot,
add salt and Cajun pepper, add quinoa and boiling water, allow to cook until fluffy squeeze a wedge of lemon over it if necessary put aside until salmon is cooked, serve with a large wedge of lemon on a bed of spinach
