Jayne Green's Recipe Competition Entry

INGREDIENTS 

1/2 grated zucchini

1/2 grated carrot

1/2 grated parsnip

1 medium onion finely sliced

2 eggs lightly whipped

2 tbls coconut flour

METHOD

MIX all ingredients together shallow fry small handful amounts then flatten into hamburger sized rosti's until golden brown. 

EXTRA EXCITING IDEAS

(1) MAKE A STACK  using a rosti some spinach, smoked salmon, homemade aoli then repeat.  Yum!

(2) use a rosti as ALTERNATIVE TO BREAD and put a poached egg on top!
