Satay Chicken with Cauliflower Rice & Broccolini.
This recipe is compliant for lifestyle (or performance if you subbed the tamari for something else?!)
I got the basis of this recipe from the Wholefoods Simply website (Easy Satay Chicken) It's very kid friendly too
*250g chicken breast
*1/2 cup coconut milk
*1/4 cup stock (I used home made but a bit of water would be fine also)
*2 heaped tbspn peanut butter
*1/2 tbspn tamari
*1 small onion-finely chopped
Chop cauli florets and blitz in processor till fine and rice-like.
In a large pan fry the onion in compliant oil of your choice (I used coconut) for 2-3 mins until tender, add blitzed cauli and stir til combined. Reduce heat to low & cover-stirring occasionally so it doesn't burn on bottom. Cook until just tender.
Put coconut milk and stock in a small saucepan and bring to a gentle boil. Add chicken, reduce heat to low, and poach for about 5 mins with lid on. Turn chicken over, then cook for another 4 mins or until cooked through. Then remove it and let it rest for 4-5 mins before slicing. Keep the liquid from pot!!
While chicken is poaching, steam broccolini.
In a small bowl combine the peanut butter, tamari and about 1/4 cup of the poaching liquid. Mix until all combined.
Serve 'rice' and broccolini topped with chicken. Sprinkle some chilli flakes if you like a little heat!
