Brooke Higgins Recipe Competition Entry

My dish, Moroccan Chicken Cous Cous: 


Chicken beast (cut small) 

Moroccan spice

Cous cous (made with chicken stock) 






1. Cut pumpkin into small pieces and roast in the oven for 30 mins (160 degrees) 

2. Cut up chicken into size of preference and cover with Moroccan spice, then fry on frying pan until cooked 

3. Steam broccoli for 10 mins or until preferred 

4. Cous cous- follow instructions and leave to sit 

5. Add all ingredients into bowl and add avocado to the mix and I add a pinch of salt and pepper just because ;) 

Created by: my friend cooked this dish for me one night and I have just made it ever since and love it! It's so good for lunch and I feel it's a good substitute fried rice which I loved 😊
