Trixi Oldfield's Recipe Competition Entry

Family Curry (and stew for kids too!)

This is a warm, hearty, healthy and versatile meal that can feed babies from 9 months, through to adults at a dinner party. It's quick and easy, and can suit either performance or lifestyle levels. It is also great for freezing and bringing out as meal when you can't be bothered cooking. Any vegetables can be added, just keep the following as a base. 

Preparation time (excluding cooking): 10 mins.
Serves about 6 adults. 

Ingredients:
Approx 1 cup chopped pumpkin
2 Carrots
1 chopped onion
1 kilo diced stewing steak or diced beef
440g tin diced tomatoes
Approx 1tbsp cinnamon
1/2-1 tbsp curry powder (this is mild, add more if you want it hotter) 
Salt or powdered stock to taste. 

Method 
Brown the beef in a frying pan (Not vital but it keeps the meat moist). Then put the beef and add all of the other ingredients (except curry powder if serving to kids)** to a slow cooker on high for about 6-7 hours, or on low for 9-10 hours. Alternatively put in a 150 degree oven for about 3-4 hours. If it seems oily on top (because of the meat), spoon off the oil, or add frozen beans and cook for another 20 mins. 

*Serve with brown rice and natural yoghurt (lifestyle diet), or it is delicious on a bed of mashed sweet potato (performance diet). Other great garnishes are broken coriander leaves, parsley and/or chopped banana. 

**if serving to kids too, when the stew is cooked, set aside the required quantity for them. Add curry powder to the main batch and cook for another 20 minutes for the adults. Also, if serving to younger children, finely chop the veggies before cooking. My kids love this stew served on a bed of mashed potato. 

Great for freezing!
