Kirsty Simpson Recipe Competition Entry

Suitable for lifestyle level 

 Cabbage Rolls

500g Chicken mince

100g Pine nuts

½ Cup Raisins (no added sugar)

½ Handful Fresh mint

Handful of Fresh parsley

Whole Green cabbage


2 cloves of garlic

1 Onion

1 Capsicum 

~6 Tomatoes 


1.       Cut tomatoes into halves and roast with the capsicum and onion in the oven at 200⁰c for about 15 minutes

2.       Blanch the Cabbage so you are able to remove the leaves easily

3.       Place pine nuts in the oven for about 5 minutes (until golden brown)

4.       Mix chicken mince, pine nuts, raisins, mint and parsley in a bowl

5.       Place a handful of the chicken mixture into the middle of a cabbage leaf, fold in the sides and roll.

6.       Repeat until all the chicken is used 

7.       Place the cabbage rolls into an oven proof dish

8.       When tomatoes, onion and capsicum are roasted place in a food processor with garlic and blitz until smooth

9.       Pour sauce over cabbage rolls and place the dish in the oven at 180⁰c for about 50 minutes, or until the chicken is cooked through 

10.   Serve with mashed sweet potato or as I did cauliflower
