Do you have those busy days, where you just don't stop; work is crazy busy or you are running children to activities and school, and you hardly get time to eat?
I sure do and I know if I'm not prepared I'll skip a meal or will eat poorly. Making this Pear, Seeds and Coconut Loaf each week and taking a piece to working is my saviour. It's super yummy, easy to make and easy to change the ingredients so you'll never get bored of it. Best of all it's full of healthy nutrients and the kiddies love it too!
Pear Mixed Seeds & Coconut Loaf
NO ADDED SUGAR, BUTTER, OIL, OR PRESERVATIVES
Makes 12 slice
1 Cup rolled oats
1 Cup shredded or desiccated Coconut
1/2 Spelt Flour
½ Cup LSA
1/2 Cup Mixed Seeds – I used Pumpkin & Pepita Seeds
½ cup Sultanas
1 large pear, pealed and diced
6 large strawberries, sliced into small pieces
1 tsp ground cinnamon
1 tsp vanilla bean paste
1 egg, lightly beaten
3 tbsp roughly chopped almonds,
Put the oats, cinnamon and vanilla bean paste, pear and strawberries in a bowl, pour the milk over them and leave to soak for 30 minutes. Preheat the oven to 180 degrees C. Lightly grease and line a 1kg size tin.
Add the dry ingredients to a bowl and stir in the rolled oats, egg, and almonds. Mix together well. Add more milk if the mixture seems too dry, but only another 1/4 cup.
Spoon the mixture into the tin and bake the loaf for 40 minutes, or until it is golden brown on top and cooked through. Leave it to cool a little in the tin before turning out onto a wire rack to cool completely.
Best stored in the fridge.
Go crazy, and add your favourite nuts, seeds and fruits to this loaf. No added sugar, energy breakfast or snack loaf, that is packed with nutrients.
I tend to make this slice every week, so to save it from becoming a little boring I like to add different ingredients, Recently I tried adding a ripe banana and it tasted amazing!
