Just received my weekly fruit and vegetable, it definitely beats going to the supermarket, plus it's fresher so last longer and a BIG PLUS, it's all seasonal and local.
There's often little surprises that I might not usually buy, but that's all the fun; tasting new produce and trying different recipes. Thanks to The Local Grocer
Today's surprise is Silverbeat, (and I haven't even started to unpack the box yet)...
Silverbeet is also known as Chard, it is related to spinach and has a slightly bitter, salty flavour and is highly nutritious.
Like many leafy green vegetables, silverbeet is rich in an array of minerals. Silverbeet has high levels of magnesium, calcium, vitamin K, iron, potassium, vitamin A, folate, zinc, copper, vitamin C, dietary fiber, and vitamin E.
Tonight I'll be cooking Silverbeet with Lemon and Walnuts (or maybe almonds - not sure if we have walnuts), using this recipe for inspiration:
